Doubletree Mickey Cookies
- 1 cup unsalted sweet cream butter, softened
- 3/4 cup sugar
- 3/4 cup light brown sugar
- 2 large eggs
- 1 1/4 tsp pure vanilla extract
- 2 1/2 cups 1-to-1 gluten-free flour
- 1/2 cup old fashioned oats
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp kosher salt
- 1 tsp ground cinnamon
- 2 1/2 cups semisweet chocolate chips
- 1 1/2 cups chopped walnuts
- 1 3in Mickey Mouse shaped cookie cutter
Instructions
Make Doubletree Mickey Mouse Cookies:
- Preheat oven to 325 degrees and line two cookie sheets with parchment paper.
- Using a large bowl, beat together the butter, sugar, brown sugar, eggs, and vanilla until combined and fluffy.
- In a medium bowl, whisk the flour, oats, baking soda, baking powder, kosher salt, and cinnamon.
- Gradually beat in the dry ingredients until combined.
- Fold in the chocolate chips and chopped walnuts.
- Touch the dough with your hands to see if it is still sticky, if so, mix in about ½ – ¾ C flour.
- Sprinkle flour onto a cutting board and roll the cookie dough into ½ in thick.
- Use the cookie cutter and cut out mickey mouse shapes.
- Bake in the oven for 10-12 minutes or until the cookies are a light golden brown.
- Remove from oven and allow to cool before eating.
